How can I prove that I can't work to get unemployable IU?

After I left the military in 2022, I only had one job from April to July 2022, but I quit because it made my service-connected anxiety worse. I haven't tried to get another job since then and just live off my VA disability income (100% permanently and totally disabled) because I'm worried my anxiety will get bad again. The job was in an office and involved dealing with lots of people. I also can't do physical work because of service-connected injuries to my feet and knees.

If you're already 100% permanent and total scheduler, you can't apply for Individual Unemployability (IU). IU is for veterans who aren't at 100% yet but qualify for IU, so they get paid like they're 100% for as long as they're not working or remain under the poverty threshold.

You can choose to work or not work at any time as 100% P&T without income limits.
